I played "The Irishman Dances" when I was in elementary school (late 1970's) and LOVED it! Now, as a piano teacher, I find that my early intermediate-intermediate boys love it. The middle section contrasts with the beginning and end with a slower tempo and different time signature, but...

those changes are not too difficult for them to handle. They will love the upbeat sections, and it does indeed sound very "Irish". Not a difficult piece to learn as far as notes and rhythms are concerned, but I marked it as "intermediate" because of the quick position changes.
