The blues sensibility resonates so deeply with me, and this tune comes straight from an attempt to imitate and assimilate the cadence, delivery, and phrasing of blues vocalists. In order to maintain interest for the listener, I wrote the piece to modulate key centers for each soloist. While this track has only myself and Gerald soloing, it's particularly fun to play live with multiple musicians getting turns in various keys. The title refers to a food dish in the Southeastern U.S.
