This melody was originally entitled "In Dulci Jubilo" and has been known as a carol of German and Latin extraction dating from the middle ages.  It was written in English by J.M. Neale, and further arranged by Robert Pearsall in 1837.  This song has been found in the Lutheran hymnal by Joseph Klug as well as collections for many combinations of voice written by Michael Praetorius.  This particular arrangement presents the tune in an interesting style with ostinatos in both the piano and the violin.
