I did it almost entirely by ear (though I made the score available to those in my choir who wanted it) and it took a lot of blood, sweat and tears, but it was totally worth it, and is now an established choir favourite. If you're teaching by ear, the best thing I found was making up silly words for the accompaniment parts to sing with their 'ahh' and 'ooh' sections, as this helped the melody and rhythm stick in their heads much better than just using ooh.
