Licorice is a snack adored by some, but hated by many. Salmiakki is a type of licorice that is on an entire new level because it has a new element: ammonium chloride. First created in 1930’s in the Nordic Countries, Salmiakki has become one of the most famous Nordic delicacies. How could this possibly relate to music? Salmiakki contains an interesting and volatile combination of flavors, so expressing this in musical form creates some interesting tension and dissonance, also with a tinge of sweetness now and again. Salmiakki is mostly an atonal work with a small selection of extended techniques such as quarter tones and Bartok pizzicato, all adding to the acidic and bitter quality of the music.
